Rije\u010d je, naime, o antikancerogenim sastojcima koji se nalaze u nekim namirnicama, a usporavaju rast \u0107elija raka. Kada govorimo o karcinomima, treba da budemo svjesni toga da su kancerogene promjene dinami\u010dka pojava u na\u0161em organizmu i da se karcinom kod pojedinih osoba ipak razvije u patolo\u0161ki oblik, dok kod drugih ne. Kada nauka razmatra ishranu i u\u010destalost pojave karcinoma, mo\u017ee da se primijeti da je u isto\u010dnim zemljama stopa pojave karcinoma daleko ni\u017ea nego u zapadnim. Nau\u010dnici pretpostavljaju da uzrok tome le\u017ei upravo u na\u010dinu ishrane, odnosno u konzumiranju odre\u0111enih vrsta namirnica. Dugo se smatralo da su glavne komponente hrane &#8211; bjelan\u010devine, ugljeni hidrati, masti, vitamini, minerali i vlakna &#8211; glavni nutrijenti u hrani. Me\u0111utim, ve\u0107 du\u017ee se zna da u namirnicama biljnog porijekla postoje i fitokemijski sastojci koji posjeduju upravo to antikancerogeno djelovanje.<\/h3>\n<p>Fitokemijski sastojci pozitivno utje\u010du na imunolo\u0161ki sistem i tako spre\u010davaju dalji rast \u0107elija karcinoma. Neke od zna\u010dajnijih fitokemijskih sastojaka su genistein u soji, kurkumin u za\u010dinu kurkumi, delfinidin u borovnici, glukozinolati u kupusnja\u010dama (bijelo i crveno zelje, kelj, ra\u0161tika&#8230;), grupa polifenola u npr. zelenom \u010daju, dijalilsulfidi u luku, sulforafan u brokuli&#8230; Da bismo organizmu omogu\u0107ili pravilnu za\u0161titu, potrebno je da te namirnice redovno konzumiramo, a i na\u010din pripreme je tako\u0111er jako va\u017ean, jer se predugim kuhanjem neki molekuli razla\u017eu i prestaju da budu aktivni. Zato se preporu\u010duje kratko kuhanje, da bi se \u0161to vi\u0161e o\u010duvale dragocjene komponente.
