O pravilnoj ishrani danas se mnogo govori, ali se naj\u010de\u0161\u0107e ne zna ta\u010dno \u0161ta se pod ovim podrazumijeva, jer se u svakodnevnom govoru \u010desto govori i o zdravoj ishrani.<\/p>\n\n\n\n<p>Po preporukama Svjetske zdravstvene organizacije, pravilna ishrana se zasniva na uno\u0161enju velike koli\u010dine svje\u017eeg povr\u0107a i vo\u0107a, cerealija, ili \u017eitarica, male koli\u010dine mesa od peradi ili kvalitetne ribe i sasvim male koli\u010dine ulja dobrog kvaliteta. Zdravstveno bezbjedna hrana zna\u010di i da ona nije kontaminirana ni mikrobiolo\u0161ki, ni kemijski ni radiolo\u0161ki, jer ima mi\u0161ljenja da i ovako zaga\u0111ena hrana mo\u017ee biti uzrok pojavljivanja malignih bolesti. Sva hrana koja se uvozi, posebno iz predijela gdje je velika vlaga i visoke temperature, mora biti pregledana na postojanje mikotoksina. I prilikom \u010duvanja, naro\u010dito zrnaste hrane, treba izbjegavati prostorije s visokom vla\u017eno\u0161\u0107u i temperaturom. Obaveza proizvo\u0111a\u010da je da na svakom pakovanju hrane istaknu nutritivne \u010dinjenice, dakle ne samo \u0161ta je hrana po sastavu i koliko konzervanasa sadr\u017ei, ve\u0107 i \u0161ta u 100 grama jestivog dijela ima od hranljivih i za\u0161titnih materija, koliko energije i dozvoljenih dijetnih vlakana sadr\u017ei.<\/p>\n\n\n\n<p>Kada se govori o svje\u017eem vo\u0107u i povr\u0107u, podrazumijeva se da se radi o onom koje sadr\u017ei mineralne materije, vitamine i dosta vode, \u0161to zna\u010di da im je energetska vrijednost mala. Hrana od \u017eitarica treba da bude od cijelog zrna. Crna bra\u0161na su bitna za prevenciju mnogih bolesti, pa i malignih, jer u njima ima mineralnih, hranljivih i materija koje imaju osobine da pobolj\u0161avaju zdravlje, kao \u0161to su selen, cink, kalcijum, \u017eeljezo i magnezijum. Sadr\u017ee i dijetna vlakna, kao i materiju lignan, koje zauzimaju zna\u010dajno mjesto u prevenciji malignih i kardiovaskularnih bolesti.<\/p>\n\n\n\n<p>Dnevno ne bi trebalo da unosimo vi\u0161e od 80 do 100 grama mesa, a trebalo bi da zaboravimo na crvena mesa. Kada se govori o uljima, moraju biti dobrog kvaliteta, biljnog porijekla, u te\u010dnom stanju, dobijena hladnim cije\u0111enjem. Neke masne kiseline koje se nalaze u uljima su od Svjetske zdravstvene organizacije ustanovljene kao faktor rizika za pojedine lokalizacije malignih bolesti, pa se zato savjetuje da, osim o kvalitetu ulja, povedemo ra\u010duna i o njegovoj koli\u010dini u ishrani. Na\u010din pripreme hrane tako\u0111e je va\u017ean za o\u010duvanje zdravlja.
