Danas se gaji i planta\u017eno, kao puzavica. Njene lijane debele su dva do tri centimetra a duge \u010dak i do deset metara. Duga\u010dke \u017eute mahune beru se prije dozrijevanja i moraju se preraditi u roku od 48 sati, da se ne bi upljesnivile. Svje\u017ee mahune nemaju karakteristi\u010dnu aromu, ali se ona razvija u posebnom procesu uz djelovanje enzima. Najprije se su\u0161enjem na suncu, vodenom parom ili ponavljanim umakanjem u kipu\u0107u vodu umrtvljuje tkivo ploda, pa slijedi fermentacija pod utjecajem zraka, toplote i vlage u bakrenim kotlovima, usred \u010dega potamni. Proces traje nekoliko nedjelja, a zatim se vanila su\u0161i. <strong>Vanila se koristi kao aroma u raznim vrstama kola\u010da, suflea, krema, pudinga, slatkih jela, napitaka i slatkih sosova<\/strong>.<\/p>\n<p>\u0160ipku vanile valja kuhati samo kratko u jelu kojem je dodajemo, a zatim izvaditi, osu\u0161iti i staviti u teglu sa \u0161e\u0107erom (mogu se koristiti u vi\u0161e navrata). Vanilin \u0161e\u0107er se pravi od vje\u0161ta\u010dkog vanilina (od eugenola iz karanfilica, ali i iz sulfidne baze koja ostaje pri proizvodnji celuloze). Dok je pravi vanil-\u0161e\u0107er prepoznatljiv po crno sme\u0111im to\u010dkicama vaniline \u0161ipke.
